I'm not saying that the virtual ribbons don't have their uses, just that I personally don't use that function. Regarding your question of how many keystrokes we should need to remember, I don't use every function in word every day, but I do remember the keystrokes for the common functions (or the ones most common to me anyway). Also, Microsoft does provide some pretty comprehensive keyboard documentation on their web site.
