day_of_week requires options:
https://github.com/apache/arrow/blob/master/r/R/dplyr-functions.R#L838
and none were provided in the instance of calling it directly. If you're
reaching in to call those functions directly, there's some implementation
detail knowledge required. Is there anything we should change here?
