## Summary
- Parameterize `test_exactly_once_source` with `group_protocol` (`classic`
and `consumer`) so the matrix value is actually used.
- Pass `consumer.override.group.protocol` on `VerifiableSource` for the EOS
offsets consumer, and pass the same protocol to the validating
`ConsoleConsumer`. Without this, both stayed on classic
(`ConsumerConfig.DEFAULT_GROUP_PROTOCOL`).
## Test plan
- Ran ducktape `ConnectDistributedTest.test_exactly_once_source` with
`clean=true`, `connect_protocol=sessioned`, `metadata_quorum=ISOLATED_KRAFT`:
- `group_protocol=consumer` — PASS
- `group_protocol=classic` — PASS
