you can see the 302 responses in your 'view results tree' listener. its under the 'Sampler result' tab. i am using JMeter 2.0.1 by the way, but i am sure previous version should have this as well.
to use the response assertion, under 'Response Field to Test' select the 'Response Code' and check for the '302' response.
