It may help if you add a Save Response post-processor to the test plan -
that will save the response data in separate numbered files.

This sounds like one of those problems where you kick yourself afterward
because you overlooked something simple. Like maybe the test is pointed
at the wrong server. Maybe you're looking at the wrong log files on the
server. That sort of thing.

Am I to infer that the "requests and responses" in your view results
tree look exactly as they should, including the response HTML from the
server?

something. I have recorded a use case where a user submits an order and then
queries the state of the order; I am expecting those actions to be reflected
through visible activity through our product's user interface when I run the
JMeter test.

Report but nothing actually happens at the server as far as I can see. The
use case involves the submissions of orders by a user and each submitted
order should generate a process exception that is shown through the GUI of
our application. However no exceptions are generated at all which suggests
to me that no REAL orders are being fired into the system. So what is going
on?
