To record results in XML format, do the following:

1.      In the C:\jakarta-jmeter-2.0.1\bin directory, open the  
jmeter.properties file.

2.      Change the value of the output format from CSV to XML:

        jmeter.save.saveservice.output_format=xml

Note that output format is different than output file extension. You can save 
results in either CSV or XML output format in a file with the standard ".jtl" 
extension. This is useful because JMeter uses ".jtl" as the default extension 
for result files.

again some questions. Thanks for your help!

Is possible to name the output file (when saving listeners) dynamically, e.g. 
with a timestamp in it? When using a variable name, jmeter does not resolve the 
name.

Does it make sense, to use the -n (nogui) parameter together with the -s 
(server) parameter? The server does not display a gui anyway!?

How can I change the output format of a listener-file from XML to CSV?
