Not in Rasmol (except from the command line, as already noted in this thread), but Chime has on its pop-up menu a Select > Chain > (choose among present chains), as well as a Color > Chain, wihich I find VERY useful for any novice user that won't go into opening a console and issuing command-line commands. There are also Select > Residue and Select > Atom, both with a choice among existing items.
