#1 You can color the isosurface when you create it, in the same command, though I often find this tricky to achieve.

#2 Much more friendly for me is to color later, you must use the object ID notation, that also works for draw among other commands: just add a dollar sign before the ID:

color $A red


With respect to hide and display, in addition to what you use there is also

hide $A
