You are probably thinking of "Within You Without You", from
Sgt Pepper, however George played sitar and 'a dash of
acoustic guitar' on it.
So in answer to which song was the only one in which no
Beatle played an instrument, four actually qualify:

The Inner Light-which was the B-side of the Lady Madonna
single (now avail. on "Past Masters vol 2" CD), recorded in India
by Indian musicians directed by George.

Good Night-Orchestra and Ringo's vocal.

Eleanor Rigby-String quartet accompaniment.

She's Leaving Home-String section accompaniment.

Revolution #9 does not qualify; John played Mellotron on it.
