[jQuery] Make jeditable select show the option's text instead of value

I mean
If I have this:

{'E':'Letter E','F':'Letter F','G':'Letter G'}

and the corresponding generated select with options.

I want jeditable to display for example "Letter F" instead of  "F"
after selection.

Is it possible?
