You can turn off the standard spinner by setting spinner to null:

$('#tabs').tabs({
    spinner: ''
});

For displaying another loading message, you need to brew your own,
utilizing the select and load callbacks:

$('#tabs').tabs({
    spinner: '',
    select: function() {
        // show spinner
    },
    load: function() {
        // hide spinner
    }
});

I would probably use a positioned element for the spinner to place it
on top of the tab content.
