Magnifier has been completely removed from jQuery UI for the final version of 1.6 because it doesn't really fit into the UI collection. However, it's not lost: It will be a part of my personal plugin collection, to be released soon at paulbakaus.com. It will contain plugins such as the magnifier or the carousel component from the demo page. More on that on the final blog post about 1.6.
