Tough one. The icons need to be block-like to hold their 16px squares. Ideally, we'd set ui-icon as inline-block in the CSS framework but the support wasn't good enough across our browsers.
Within UI widgets, we almost always position the ui-icon span absolutely, and give the parent element relative position and enough padding to accommodate the icon being positioned within it. Will this work for you?
