mathew, Read more carefully: As the JAWS help indicates (after hitting JAWSKey+F1) you should hit Control+JAWSKey+F to search within the help screen itself!
Also, let JAWS keyboard help be your friend. Hit JAWSKey+1 to get into JAWS keyboard help. then just hit bunches of keys to have JAWS say what each key combination does. Particularly focus on keystroek combinations which involve control+another key, shiflt+control+another key, Control+shift+alt + another key, etc. JAWSKey+W also brings up useful help for many JSonar functions.
