Taglibs work very well for this. In fact I made a simple taglib in
about an hour that handles mail like this:

<m:mail>
<m:from> me </m:from>
<m:to> <%=person%> </m:to>
<m:subject> this email </m:subject>
Hello <%=person%>,
Blah blah, I'm the mail body.
</m:mail>

Alterntively you could do:

<m:mail from="me" to="<%=person%>" subject="this email">
Hello <%=person%>,
Blah blah, I'm the mail body
</m:mail>
