This is how HTML Forms work, only the value is returned. (the same is true
for checkboxes anbd radio-buttons)

If you want the text as well, you can contrive something in HTML and
Javascript to do that. Make a hidden form field and either onchange of the
<select> or onsubmit of the <form> fill this hidden field with the text
value of the selected option of the <select>.
