I thought that Venkat Subramaniam was the best speaker I saw. He was very funny and entertaining, he knew his stuff cold, and his presentations were polished.
I went to his Web Services presentation. It was a great intro and also gave a lot of "meat" which was still understandable to a newbie such as myself. He also kindly answered some detailed questions I had on web services via personal email after the conference.
His "Prudent OO Development" was also an excellent, low-tech discussion of the key aspects of good OO design. I think any OO developer at any skill level would benefit from his talk. If you don't know and follow these practices (when it is prudent), then you should definitely make a goal to learn and start applying them:
* DRY * Composition vs. Inheritance * SRP * OCP * LSP * DIP * ISP
Saying Venkat was the best is a big statement, because all of the other speakers were excellent too. I learned a ton of "stuff".
I would highly recommend NFJS to any java developer.

For the rest of you that were there, what were your thoughts/favorite presos (as of course I didn't make it to all)?
