Two others I've come across:

vqwiki    [very quick wiki]
JSPWiki

Had the first one setup against a mysql db, while the latter uses its own
persistence files. I prefer the latter as it has a better feel and is easy
to setup.

A non-Java one that I've seen a lot of good words for is moinmoin.
