The included PostGIS Datastore should work (never really used it), but it has the usual limitations you can find in almost every GIS using PostGIS (don't work with multiple schemas, don't work with mixed-case names for tables and fields, etc.).
But from the Help point of view, the "Add Datastore Layer" is always used the same with no regards about which Datastore (beeing it a plugin or not) works behind the scenes. Then, each Datastore has its own different connection parameters and sure enough they can't be described in the "core" Help, but the "common" part may be.
