Hello Tony, have a look at Miniconda. It has about 35 MB, instead of the 500+MB of a full Anaconda installer. Then create an Anaconda environment that has only the packages relevant for your environment: 1. Miniconda 2. Jupyter Notebook and dependencies 3. additional science packages
Then create an installer image just with these packages.
