As Eric noted, this is configured outside of K-9 Mail. Check your phone's settings:
Settings->Language & input I presume it shows the Android Keyboard (AOSP) as your default input method. Tap the settings button for that keyboard, and then select Input Languages. Uncheck "Use system language", then check the languages you want. Your keyboard will then have a language button beside the space bar. Tapping it will change to another language; Long press will bring up a menu. The space bar will show the current language. Long press of the space bar will also bring up a menu.
