Those icons are just placeholders if you don't have a contact photo for the 
sender (or recipient if you sent the mail). 

By adding those addresses to your contacts, you can also add a contact photo, 
ie. the logo of the organisation or something that fits. That way it is really 
easy to see who the sender is, which I really like.
