It will use the other outgoing settings from the account in question.
It only changes what the receipient will see when reading your email.

You can du that using identities
Account-settings -> Sending mail -> Manage identities
That will allow you to chose between different email addresses (and
name, reply to, signature and so on) when you are in the
composer-window.
