Exactly this question is mine now and there is no answer after 3.5
years :(
I want to set plain text as default on my phone, where I rarely need

It is not just hidden in some setting?
Are you wanting to show the plain-text portion of a message that
contains both HTML and plain-text sections, or wanting to strip out all
of the HTML tags from the HTML section? I am not aware of any email
clients that offer the latter feature.
