The way it's supposed to work is that you clear the app's defaults in the app manager, and from them on, Android should ask the "open with" question when you tap a phone number. Just never ever tap the "always" selection, or you'll have to go clear the default again. I haven't tried it with a phone number. Is there a URI scheme like mailto for phone numbers?
