One thing to take into consideration is that, for better or worse (worse in my view), K-9 displays the HTML part of a message (even if a text part is available - with no setting, that I've found to change this behaviour). The font, font-size, color, etc., on an HTML message is selected by the sender, not the recipient or their client. So, while what you are seeing may be a bug, (though I don't remember encountering it on any of my devices, running K9 5.107) you may be dealing with correspondents who are playing font games.
