This got me thinking it could be gmail, and it was! I had not set up an alias for the address associated with "user". Apparently, when this happens and you use the unknown address for outgoing email, gmail quietly changes the From address to the one gmail knows as the default alias. I created the additional alias and all works fine. Thanks!
