It's not really an issue to fix at the level of k9. When you switch from Wi-Fi to mobile or vice versa, you're creating a while new set of connections, effectively doubling them. The mobile connections all need to time out.
You can probably mitigate the problem one of two ways... 1) leave thunderbird running, it will then take longer for your mobile device to be able to sync again once on Wi-Fi but that sounds okay in this situation. 2) reduce the number of folders you are syncing on mobile. You mentioned gmail so you don't have any options on the server side.
