I don't think the behavior pertains to "holding" left click per se, rather than
just left clicking a file that is already selected. This action to trigger
renaming a file has also always existed in windows explorer as far as I can
think back.

If you actually trigger this when trying to double click, you might want to
make the general plasma double click interval longer, by going into System
Settings -> Workspace -> General Behavior -> Clicking -> Double-Click Interval.

That said, going back to the topic, I don't think the rename action should
trigger when holding the mouse button down, because the user probably wanted to
drag the file instead and was just slow on moving the mouse (for which no
configurable delay exists)
