I had this same issue, I was messing with it and figured out that you could
make the configure button disappear by assigning it a sensor before you set it
to be a process monitor. 

When you first create the widget, exit edit mode, then right click the widget
and select "Configure System Monitor Sensor..."
Then, go to "Sensor Details"
Under the "Sensors" section just add something, I chose CPU% for all cpus.
Then, go back to Appearance and under the dropdown where it says "Pie Chart",
change it to "Process Table"
Hit "Apply" then go check the sensor section to make sure it is still present.
As long as it's still there, when you hit "Ok" to close the prompt, next time
you boot the configure button shouldn't be there.
Its worked for me for a few weeks now.

TLDR:
Configure Widget > Sensor Details > Add a sensor under "Sensors" > "Apply" >
Appearance > Select "Process Table" > "Apply" > Double check sensor is under
Sensor Details > "OK"
