The automatic tag detection process can only be started manually. You can see
if it's still active in the progress manager's status bar.

You're probably writing the metadata to the images. When you delete the tags,
the metadata is reread from the images. It's likely that not all tags can be
deleted. This is probably due to metadata fields that don't have a complete tag
path, causing them to appear in a different position in the tag tree. There can
be various reasons for this; even one image whose tags can't be fully written
is enough. We would need to identify these images and determine the cause.

We would definitely need a terminal log to be able to help you further.
