To update, following this thread, I can verify that the special key used by the
copilot key isn't "TouchpadOff" like what GNOME reports, but "XF86Assistant"
https://discuss.kde.org/t/how-to-get-system-settings-to-recognize-the-f23-part-of-copilot-key-combo/
Leaving this here for any people coming from Google looking to see if this
issue to resolved.
