Long time has been passed since Janet pointed out the need to use a different
default format than PNG while saving screenshots.

Is it still on the roadmap to enable end users to change that default?

Alternatively, I took a look to the sources and I can tell that it's using PNG
because it's hardcoded during image encoding, but changed afterwards when it is
saved and the mime type is extracted from the URL provided. If you may instruct
me how can I contribute, I'd like to give it a try and send a PR.
