As other users said, with a high refresh display the animations are very very
slow, seriously I thought there was something broken and I had to disable them
till I had time to properly find the issue. Even on the fastest slider setting
it's too slow. I'm happy to find this is not a performance issue or a bug but
just a configuration issue, kde 6.7 has been a good release for me with no
noticeable regressions except for this one.

As someone suggested I changed the value inside .config/kdeglobals, to be safe
I did it using this command:
kwriteconfig6 --key AnimationDurationFactor 0.125

And checked that the value has indeed changed on the file.

But I wanted to test different numbers to see what's the best value for my
setup but I can't figure out how to force plasma to reload/apply the value
inmediately, is there a qdbus way to notify the change or something like that?
I tried a few things but I failed to find the correct way to do it.

Thanks.
