Is there an option > to update only parts of the system? I think you can do something close to what you're asking about in Discover. Start Discover and click on "Updates" in the left navigator. That should search out any available updates and present them in the main window. From there, in at least some releases of Discover, you can "Select All" or "Select None" with buttons along the bottom. By choosing "Select None" then checking the ones you want to apply, you can selectively install updates. Should be able to remove pipewire this way, then proceed with the giant update. My system has been updating normally since the last month or so. On Plasma 6.7.3 currently, seems to be working OK.
