What it ended up doing was pulling up that 'hey, these files can be recovered or discarded' menu that pops up when opening a file that has an autosave. After what I outlined above happened, I decided to mess around with the welcome menu and closed/reopened the app a few times to try and get it to crash again and now it's functioning as intended. I did not update my system nor did I mess with the app in any way. I'll be able to mess with it more later when I have the time.
