Actually, there's already an easy way to do this:
1. Go to Configure Dolphin > general > select "Remember properties for each
folder"
2. View menu/Control button > Adjust View Properties
3. Set your preferred default settings
4. Check "Use these view properties as default"
5. Click OK.
6. Proceed to adjust individual folders with the view you prefer
This is how I have mine set up, and it works exactly how you want. It's great!
