Actually, I find all occurrences of stock_new-window.svg in the Adapta theme (the only one that works and I'm trying to figure out why it doesn't work in the breeze.) It's a symbolic link to window.svg. Also, I'm trying to create a symbolic link new-window.svg -> stock_new-window.svg and window.svg -> stock_new-window.svg in Breeze Icons and it doesn't work So the problem is not the icon names.
