If you have multiple identities set up then you can select which one is used for composing and sending a message - if the combo is not visible in the composer window then it may need to be made visible by Menu bar - View - Identity. Changing the identity here will set the "From" address and the signature (and also the "Reply-To", crypto and any other identity-specific settings).
