Figured out what was missing: "%U" at the end of the "Exec" value:
#!/usr/bin/env xdg-open
[Desktop Entry]
Exec=/snap/bin/chromium %U
Terminal=false
Type=Application
Icon=/snap/chromium/current/chromium.png
Now my icon works. Sorry for the noise.
