They ask the window manager not to draw a titlebar for them, and they take responsibility for everything. This is called "client-side decorations", or, CSDs. Evidently Evolution adopted CSDs at around the same time as you upgraded to Plasma 5.25.5, But Plasma didn't have anything to do with it; it was the app developers' decision decision.
