You can edit the CC list and remove yourself; there's a link to it in the top-right corner of the page. As for the ability to add custom shortcuts, it's still there, but you do it now in the Shortcuts page. The workflow is a bit lousy and awkward compared to the old Custom Shortcuts page, which we're aware of; see Bug 456951 and Bug 440431.
