There are two things however: Currently Gwenview does not have ability to use individual sorting per folder (see Bug 466602). Currently following Dolphin sorting when opening image from Dolphin is partly broken (see Bug 466836). Anyway, I introducing setting to sort Alphabetically/Naturally not worth it in Gwenview. If it will follow dolphin folder (maybe per folder), it will be ok.
