This is because the | character indicates a quote, just like the > character.
KMail probably should not show expand/collapse quote marks in signatures. But
then, detecting this is difficult, since a signature separator (--) can also
occur in normal text.
You can disable quote marks in the settings under Appearance->Message Window.
