I would be very very happy if some opensource email client would have the same level of usability. Aside from composing messages in tabs there are some other "features" of KMail that hurt it, for example, you need to list messages with special hotkeys instead of just up/down/pgup/pgdown, because the focus always goes into the message view, so the message list doesn't get your keypresses. And yes, composing messages in tabs is a real killer-feature of Opera Mail... I really hate separate windows for each message and each composer. About the menu: yes, there is a menu... But maybe it's possible to merge it with the main window's one, and show/hide parts of it depending on current active tab?
