So you would end up with a version that's 3 weeks old - it'll be the same as if you've compiled the newest revision 3 weeks ago. This won't change anything.
Instead, tagging "known good" revisions and building those will work - but this is only slightly better as building the newest revision, since new features are implemented in other branches. The product repository should only get bug fixes and merges from feature branches (ideally). Thus it should be fine to build from it the most time. In contrast to this, lp:kicad/stable might be an option too for building (this is where most package maintainer for various distributions build from), but this would require constant merging from product->stable (in addition to merging from a feature branch into product). Since testing was renamed to product and the use of feature branches, the stable branch is obsolete IMHO. In addition to all this, automated tests and a test procedure would be nice to determine the state of the current revision.
