Maybe I don't really understand what you mean, but I can't see any jumpiness on Linux when panning around (with middle-mouse drag). What do you mean by "it automatically fits to window, so there's not really any place to go"? It does not do any kind of auto-fitting except for the zoom-extents on file load on Linux, and I don't have my Mac machine handy to compare.
