You are right on the easiness of editing the library yourself. Just keep on rotate the 40 pins, and delete the board and put on the right one. lots of mouse click though.
However the reason I prefer to convert the library than build it myself from scratch is to avoid human errors, especially to the complex CPUs. I bet TI has made lots of effort to make sure those library are almost error free. And that is definitely the value of converting the library. The KiCad module and Library editor is so simple to use that you don't really need to "borrow" Eagle Library symbols. Even for complex parts like the TI cpu's. I really really recommend you to learn to use the Kicad lib/mod editor, it's one of the best I've seen for pcb work and I've been doing this since 1978...
