It is slightly odd, but in the Eeschema help file, section 5.5.2:

Notice 3:
If a wire must be connected to another wire, otherwise than by their
ends, it will be necessary to place a junction symbol at the crossing
point.

So in your first example, you could place a junction on the ends of the
pins of the centre resistor and the connection will be made.

As for the labels, I cannot see a way to change the text size, but then
again I've never wanted to.
