If you leave the mapping empty (which yes, we did...) the value will be saved into the more_subfields_xml column in XML format. So after updating the mapping, the value will still be there, but you will not be able to access the information from the interface. So I was suggesting that there should be a way to copy that information into the new field or give at least a warning, that you might have to do so.
